Chef Sara Rios: Learn About Her Journey of Culinary Discovery and Passion

In the world of catering, it takes a team of chefs to truly stand out and create memorable dishes. One such extraordinary chef who has been an invaluable part of our catering company is Chef Sara Rios. Read more about her time with us and what she’s up to now in our interview below. 

Sara Rios spent 1 year and a half with us. With a heart brimming with gratitude, she expresses how the experience has shaped her and deepened her love for cooking, reminding us all of the power of good food in creating lasting memories.

Q: Tell us a bit about your experience with Pasta Party Miami as a chef. 

A: I consider Pasta Party Miami my family. I spent 1 year and a half working for Pasta Party Miami and my time there served as the confirmation that I wanted this in my life. I respect the love and guidance I received at Pasta Party Miami. I will never forget it.

Q: Where did you study?

A: While in Miami, I studied at the Mariano Moreno Culinary Institute.  

Q: Tell us a bit about your restaurant, SkyHills which you owned for 3 years. 

A: When I returned to Colombia, I opened up my own restaurant Skyhills. There I learned just how far I can go and that sometimes I put my own limits and I avoid deciding and doing. But Skyhills showed me that I am capable, of making a menu, bringing in guests. 

Unfortunately, I had to close SkyHills because of the pandemic. I closed that chapter, and I am waiting for new opportunities. 

Q: We can’t wrap up this interview without asking you the real question we all want to know the answer to- what is your favorite dish?

A: That is such a hard question, especially for someone who loves to eat as much as me!  But if I had to say, I love Chimichangas, I would eat them anywhere in the world. I love Mexican food, its history, and its roots.

Message of Hope From Your Pasta Party Miami Family

I don’t think that we were prepared for this to happen. We were going through our regular lives and schedules, busy as usual. This change made us all slow down our lives a bit. Even though we are at a point where we don’t know when things will go back to “normal” we choose to believe that the best is still yet to come. Even though some of us might not be working and we are worried about how we will pay for rent this month, we are grateful that we have been given a chance to wake up and make the best out of our days.

This is a message of hope. That even though we can’t see the light at the end of the tunnel, we have faith and confidence knowing that it will come. We will soon be able to visit our family members, hug our friends, and celebrate birthdays together. 

Even though we have been apart, it seems that we have also grown closer together. We reach out to family and friends we would usually not talk to and make sure they are healthy. We have midday zoom calls with family just to check up on them. We do drive-thru birthday celebrations because we love the people we are doing life with and want to celebrate them, even if it is at a distance. There is something positive growing here, despite the storm and the rain and the dark clouds, there is a rainbow of hope. 

Keep your eye on the rainbow and everything else shall pass. Thank you for being a part of the Pasta Party Miami Family! We love you and hope to see each other soon!

Pasta Party Miami During COVID-19

During the past few weeks, we have been constantly reminded of maintaining social distance, staying home, and staying safe. As a catering business, we thrive off of large events, and this time has been extremely difficult for us. Just like many family owned small businesses, we have felt the full impact of the global pandemic in our own homes. However, we choose to believe that this too shall pass. We have been working hard to take these months to reorganize, and strategize so that when we are able to host events, we are at 100%. 

Even though this is not “normal” for us, we have realized the importance of rest during this time. Not just relaxing at home, but undergoing active rest. Spending quality time with our families, learning new skills, and reaching out to loved ones that have been affected by this pandemic is priority for us at the moment. One of the main accomplishments we have done during this time has been starting our own Youtube page called “Rico y Facil.” We have been wanting to start a youtube account for months now and never had the opportunity to do so. What better time than now? Even though we are not currently hosting events, we are sharing delicious recipes you can do right at home. Make sure to subscribe and check us out!

We interviewed our head chef, Alexa Londoño on her experience learning new creative techniques to grow her business as she cultivates long-lasting relationships with her clients. Alexa Londoño has been the head chef at Pasta Party Miami for 19 years. With great experience she understands that there is always room to learn. Below she talks about her experience taking a Floral Arrangement course with renowned Floral Designer, Aniska as well as a Masterclass on business and marketing with Fleursociety. 

Can you tell me a little bit about your experience taking Aniska’s Floral arrangement course?

My experience was extraordinary! Aniska is a beautiful human being, filled with love and passion for her business. She has a special talent for teaching and it showed throughout the class. She made us feel comfortable and like family. She is a woman filled with dreams that has made them come to life. She spoke to us about her testimony, her beginnings in the business, and the importance of finding mentors that can help guide you as you reach toward your dreams. 

How did you hear about this course?

My daughters gifted this course to me! We heard about the course through Instagram and I knew that I wanted to be a part of it. However, I started getting more busy with my business that I started putting the course to the side. My daughters knew that I wanted to learn more about it and they surprised me with it! 

Would you recommend this course to other business owners?

I definitely recommend that business owners that work with design and creativity take this course. Floral design and arrangements are so important and it truly gives life to any event. Apart from being part of my business, it's a personal passion of mine to create beauty through flowers and I think others would enjoy it as much as I did. 

How are you going to use what you learned in this class in Pasta Party and your future goals?

Everything is through practice and what better way to show what I have learned than through my events directly through Pasta Party. My dream is to have a coffee shop that is filled with flowers and knowing how to design something beautiful with all kinds of flowers is key. 

Can you tell me a little bit about the business and marketing masterclass with Fleursociety?

That masterclass I actually won through a giveaway on Instagram! It was a great experience. The creator of that initiative, Cristina Barragan developed an exceptional course that helped me get to another level and make changes to the way I structure my business. There were different panelists throughout the 2 intensive online class days. We will begin to use these tools in our social media, blogs and more. We have a lot of great things coming this year for Pasta Party!

When Pasta Party Miami began in 2001, we knew that we wanted to bring the best service to Miami, FL. Perfecting our signature pasta, we went full force into developing our brand and promoting ourselves to reach our community. We started small, a humble family of 4 with a baby on the way and a dream of being business owners. 

Owning a business is not always easy, and over the past 19 years we have undergone highs and lows. Without any employees, we did everything in our small home kitchen. The craziness of toddlers and children running around did not stop us. Instead, our children helped us develop Pasta Party and gave us a reason to continue when times were tough. 

The important thing about starting a business is knowing that even when tough times come, your dreams should never dwindle. After 19 years, our business and family have only grown. With over 10 employees and a family of more than 6 now, the years have taught us that hard work and dedication truly make a difference. No longer do we only offer our pasta station but also a crepe station, our Coffee Bike, toston station, and so much more. 

As we enter this new year, we will continue to reflect on our roots: “Our Food, Your Event, One Family.”

The Creative Process: Our Tribe and the Craziness of Event Days

This past weekend we had a busy Saturday. By busy we mean we had 4 different events in one day. Talk about having a jam-packed weekend. Preparing for an event takes planning, and time. We had to finalize all cooking, pack all materials into storage bins, and put everything into the trailers that were going straight to the events. Our day started early, around 7am and did not finish till around 2am the following day. There were 5 employees working on preparing the packages and it seemed that we were running around like headless chickens making sure we didn’t forget anything. “Did you pack the oil?” “Wait.. I think I did but I’m not sure anymore.” That means rummaging through another 3-4 boxes to make sure that oil is packed and ready to go.

After being in this business for 20 years, we know what works and what does not. Its second nature to us. We create our own designs and decorations, all which must be perfectly planned and developed during this process as well. The hours before the event are crucial to making sure that the event goes smoothly. Even with lists, it is still possible that we forget certain things. But because of great teamwork, we have been able to manage all bumps in the road these past 20 years. I mean, a family owned business is nothing without family and friends that support us. Our tribe has evolved over these 20 years, but the essence of who we are has remained the same. We welcome challenges, such as getting through 4 events in one day, and we do it as a family. We support one another and we work towards making sure that all of our events reflect our passion for cooking and our unity as family.

In welcoming the new year, we are grateful for the blessings and the struggles we have had to endure. Because of them, we continue to strive for excellence in our cooking, our service, and our creativity. We do this because of you. We are excited for 2020 and the exciting projects we have in store. We hope that you will follow along on this journey with us.

Have you ever met someone that loves to plan events? I mean they go all out for events and they have everything coordinated from the food, the theme, and entertainment. It seems like they always have everything under control and are ready for any disaster with plan A, B, C and at times even D. For some, planning an event is actually the opposite. You are creative but you’re not sure which theme to go with, planning food is always a nightmare, and if disaster strikes, you just resort to ordering pizza and calling it a day. It's happened to all of us. Check out these 3 easy tips on making the event planning process an exciting experience rather than a dreadful one:

  1. Make Pinterest your best friend: Pinterest is overflowing with event ideas from decorations, food, and even entertainment ideas for guests. You can reuse ideas and personalize them for your own party. There are endless options! 

  2. Make a list of things you need to get: From experience, at times, planning an event can seem overwhelming. Depending on the size of the event, there are different moving parts that you have to consider. Write down everything that you think of onto a piece of paper. This way you won’t forget, even if you are just brainstorming, it’s better to scratch off bad ideas than regretting not writing down great ideas!

  3. Have fun: Cliche, but true. If you’re not having fun, it really loses its purpose. If you are having fun, your guest will have fun and everything will feel a little bit less stressful.

One of the most dreaded things to hear during the Holiday season: “is the food ready?“ As you frantically try to figure out where you’ll be going, who you’ll be seeing, and what you’ll be eating, there are still those few comments that really send you off the rails. Because we live in a time where everything is quick (microwave quick), holidays don’t really feel so stress free as they should. You cook all day, maybe even start a few days before, give yourself 10 minutes to get ready, and hope the turkey taste good for the guests. I mean fingers crossed it’s as good as you hope. We forget about the important part of the Holiday season and that’s spending time with your family. It might be children that come home for the holidays, relatives that live in other countries, or friends that love Friends-givings; we forget how important they are because we are too busy running around wondering how to make sure the food lasts for the 10 extra people that showed up(I know Hispanic families understand that).
